This is one of my favourite soup recipe. I tried this dish  in a restaurant over 10 years ago, and I made this soup since then, sharing this recipe with family and friends.

Since I become passionate about promoting healthy eating, encouraging people on increasing their daily nutrient-dense food, I couldn’t wait to write about this Easy Zucchini, Garden Peas, and Basil Soup and share it with all of you.

Easy Zucchini, Garden Peas, and Basil Soup Ingredients:

  1. Zucchini: Zucchini is a summer superstar, packing a punch of vitamins and minerals. It’s low in calories, high in fibers, and a great source of antioxidants, which can help reduce inflammation and support overall well-being.
  2. Garden Peas: Fresh Garden peas bring a natural sweetness to this soup. They’re rich in protein, fibers, and essential vitamins, making them an excellent choice for those looking to increase their plant-based protein intake.
  3. Basil: Basil adds an aromatic twist to this soup, infusing it with a burst of fresh flavor. Not only does basil taste fantastic, but it also offers potential health benefits, including anti-inflammatory and antioxidant properties.

Ingredients:

  • 300 gr zucchinis, diced
  • 200 gr garden peas
  • 1 small onion, chopped
  • 1cloves garlic, minced
  • 400 ml  vegetable broth (homemade or just water)
  • 10 fresh basil leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onions and garlic and sauté for about 3-4 minutes until they become translucent and fragrant.
  2. Toss in the diced zucchini and fresh garden peas. Continue to sauté for another 5 minutes, allowing the veggies to soften and release their natural flavors.
  3. Pour in the vegetable broth (I usually add just water to enjoy the natural flavour of ingredients) and bring the mixture to a gentle boil. Reduce the heat and let it simmer for about 15 minutes or until the zucchinis and peas are tender.
  4. Add the fresh basil leaves to the pot. This is where the magic happens! The basil will infuse the soup with its amazing aroma. Let it simmer for an additional 2 minutes.
  5. Using an immersion blender or a regular blender (be careful when blending hot liquids), blend the soup until smooth and creamy.
  6. Season with salt and pepper to taste.
  7. Ladle the soup into bowls, garnish with a sprig of fresh basil, and serve hot.

Pro tip: For an extra burst of flavor and nutrition, you can sprinkle some grated Parmesan cheese or nutritional yeast on top before serving.
