Easy Zucchini, Garden Peas and Basil Soup

Ingredients
  

  • 300 gr Zucchini , diced
  • 200 gr garden peas
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 400 ml vegetable broth
  • 10 leaves fresh basil
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the chopped onions and garlic and sauté for about 3-4 minutes until they become translucent and fragrant.
  • Toss in the diced zucchini and fresh garden peas. Continue to sauté for another 5 minutes, allowing the veggies to soften and release their natural flavors.
  • Pour in the vegetable broth (I usually add just water to enjoy the natural flavour of ingredients) and bring the mixture to a gentle boil. Reduce the heat and let it simmer for about 15 minutes or until the zucchinis and peas are tender.
  • Add the fresh basil leaves to the pot. This is where the magic happens! The basil will infuse the soup with its amazing aroma. Let it simmer for an additional 2 minutes.
  • Using an immersion blender or a regular blender (be careful when blending hot liquids), blend the soup until smooth and creamy.
  • Season with salt and pepper to taste.
    Ladle the soup into bowls, garnish with a sprig of fresh basil, and serve hot.

Notes

For an extra burst of flavor and nutrition, you can sprinkle some grated Parmesan cheese or nutritional yeast on top before serving.
