Easy Raw Zucchini and Almond Pesto
A Delicious Twist on Classic Pesto

- 2 Zucchini
- 2 Garlic Clove
- 20 leaf Basil
- 30 gr Almonds
- 50 gr Parmesan Cheese
- 50 gr Olive Oil
Diced the zucchini and add them to a food processor or blender
Combine Parmesan cheese, almonds, basil and olive oil
Blend until smooth. Toss the pesto with your favorite cooked pasta and enjoy!
- Keep some of the water of your cooked pasta to loose the consistency of sauce.
- You can add extra Parmesan cheese and olive oil if you like.
- If you don't like the idea of raw zucchini, you can also cook the zucchini in a pan with garlic and olive oil until tender and slightly browned, then combine the zucchini, almonds, and Parmesan cheese in a food processor and blend until smooth.
