Easy Raw Zucchini and Almond Pesto

A Delicious Twist on Classic Pesto

Equipment

  • 1 Food Processor or Blender

Ingredients
  

  • 2 Zucchini
  • 2 Garlic Clove
  • 20 leaf Basil
  • 30 gr Almonds
  • 50 gr Parmesan Cheese
  • 50 gr Olive Oil

Instructions
 

  • Diced the zucchini and add them to a food processor or blender
  • Combine Parmesan cheese, almonds, basil and olive oil
  • Blend until smooth.
    Toss the pesto with your favorite cooked pasta and enjoy!
     

Notes

  • Keep some of the water of your cooked pasta to loose the consistency of sauce.
  • You can add extra Parmesan cheese and olive oil if you like.
  • If you don't like the idea of raw zucchini, you can  also cook the zucchini  in a pan with garlic and olive oil until tender and slightly browned, then combine the zucchini, almonds, and Parmesan cheese in a food processor and blend until smooth.
